Meet our team

Our Founder

Kirsten Chesney first learned of functional medicine after struggling with multiple health concerns for 25 years. She visited dozens of various specialty doctors throughout her childhood and early adulthood, before finally meeting a physician trained in functional medicine. Through his recommendations, Kirsten found relief from her health conditions in just a few short months!

The astounding effect this had on her life emboldened Kirsten to change course in her career and pursue an education as a functional medicine nutritionist. She returned to school and got her master of science degree in nutrition and functional medicine from the University of Western States, which works closely with the Institute for Functional Medicine.

CustomCare Nutrition was created from the outpouring of Kirsten’s passion to empower people to attain their highest standard of health. Kirsten uses her functional medicine training to address the root cause of symptoms by customizing nutrition plans specific to each of her clients.

Nutrition plans consist of specific and actionable recommendations in areas of whole food nutrition, lifestyle changes, and supplemental supports.

When Not Providing Advice:

In her spare time, Kirsten explores the outdoors in her new Colorado home. Since moving to Colorado in March 2020, Kirsten has been discovering new mountain trails and camping spots. She enjoys long hikes, landscape photography, rock climbing, mountain biking, tent camping, and any kind of travel. When she’s not on a trail, Kirsten likes window shopping downtown, having picnic lunches in the park, and indulging in some local frozen yogurt!

Beth Claxton, MD

Functional Medicine Practitioner

Dr. Beth Claxton is a medical doctor, having graduated from the University of Texas in 1997. She went onwards to practice as an OBGYN in Flagstaff, AZ for the next 20 years. Her career was fulfilling but Dr. Claxton gradually grew more miserable knowing she was putting bandaids on people without fixing the root cause of their symptoms. She knew she was not healing patients in the way they needed to be healed. In early 2018, Dr. Claxton switched gears entirely and began training as a functional medicine practitioner. Today, she is board certified in functional medicine and partners with CustomCare Nutrition to provide root-cause treatment for chronic diseases. Learn more about Dr. Claxton’s practice here!
